Spec me a camera for interviews

Hi All,

The other half has a project to document the verbal history of our rural town. What is the easiest way to record good quality audio and 1080p video? It would be mostly interviewing indoors with fixed shots as the interviewees are not as mobile as they used to be.

Could this be done with an iPhone and and some sort of gorilla pod ? I'm not sure that the sound would be good ?

Any advice gratefully received.

That's pretty much what I thought. Can you recommend something that would be a step up ?
I have a budget of a few hundred but it should be as simple as possible
 
Ideally if you can record the audio separately either on an camera with an audio input jack and mic the person up or record it in a dedicated audio device and dub that over the audio in your editing.

That would be what I do. And the sky is the limit, what's your budget?
