Spec me a Christmas stuffing recipe

As title really, we have the sausage meat, but what do we need to do with it to create the perfect stuffing for Christmas lunch.
 
Sausage meat in stuffing? I did not know this existed. We usually wizz up some breadcrumbs, mix with a beaten egg and whichever seasoning we like and either stuff it up a chicken or put in a deep oven proof dish.

You're missing out on possibly the best thing ever! It's been a while but I'm pretty sure my dad used to just use some packet stuffing mix mixed into the sausage meat.

My mum has used the sausage meat/apple & paxo stuffing recipe for over 50 years.

How can you not now stuffing is pretty much always made with susage meat. To many packet generations maybe.

Agreed on sausage meat and apple is a good combo.
 
If you're going to act all pretentious about my lack of stuffing knowledge, at least proof read your post first. :p

As stated, we don't use packet stuffing, I just didn't know about the sausage meat thing.
 
I made one up 2 years ago and used it again last year as it was ace.

Sausage meat, smoked streaky bacon, breadcrumbs, crushed walnuts, dried cranberries, sage, port, salt, pepper and I think that was it...?

I forget, but it's about that.
 
I do two:

First - Tin of Chesnut puree, 2 onions, 1b sausage meat, breadcrumbs.

Second - Large pack of sage and onion stuffing, 2 onions, 1lb sausage meat, breadcrumbs

Cook the onion then add the sausage meat cook for a few minutes and then add the other ingrediants for each of the above depending on what your manking, transfer to the over and cook for 35-45 minutes. Its yummy.
 
It's all about chestnut stuffing (can of purée chestnuts mixed with sausage meant on around 50/50 ratio, then add some breadcrumbs to bind it)
