I'm studying Forensic Computing and several modules are heavily based on Linux.

For Forensics I've installed:

Backtrack 5
Fedora 17 Security
DEFT
Helix

But I'm also looking for a 'regular' linux distro to use on a more day to day basis.

So far I have installed as VM's:

Mint Cinnamon 13
Fedora 17
Ubuntu 12.04

Of these so far I like Mint the most aesthetically, I'll probably grab OpenSUSE as well and give that a spin. Any other recommendations?

I love Arch too but prepare for a learning curve in order to get everything working. The Beginner's Guide on the Arch Wiki should be enough to get it installed.

By "aesthetics" I am guessing you are referring to the desktop environment which in Mint's case would be either Cinammon or MATE both of which are pretty easy to install on Arch.
