A lot of this is on pre-order but it gives you a ballpark of what you can get for the money, I'd also say that the Ryzen 5700X has frequently been on sale for around £140 and would be a much better buy than the 5500 or 5600(X).

The above suggestions should run both just fine at 1080p, although I don't think Fortnite is all that resource heavy.
