Spec me a great viggie breakfast

Hi all,
In the tradition of OCUK I need speccing a great cooked breakfast but it needs to be veggie.
On Saturday my gf is moving into my house and I want to cook something mega for our first breakfast.

So far I was thinking of a standard English breakfast but with viggie sausages or maybe fruity pancakes?

I'm not a bad cook so should be able to manage most things.

Any other ideas people might have tried?

frittata, peppers, courgettes etc.

I don't suppose she's the type that eats fish?

Nope, full on veggie, but thankfully not a vegan.
