Spec me a large pan / wok

Evening all, I am looking for a good quality large wok, or pan. I currently use a large Tefal Saute pan (28cm maybe?) which is a decent pan, 3 inch high sides, but far too small for my needs. I like to cook up a huge stirfry and get around 5-6 portions from it (for work). Plenty of meat and veg in there.

Happily, I am cooking on gas, and I think a hard anodised pan would suit me well. No real upper limit, but needs to be pretty large!

I got a De Buyer frying pan, it's been superb and can't recommend it highly enough.
They also do them with higher sides which would be more suited to stir fry type cooking.

For stir fry you want a wok, due to the concave edges it evaporates water much much quicker than a frying or saute pan so you don't end up stewing anything.

Something like this perhaps, any heavy carbon steel wok will do you proud, they're the kind of thing you don't need to spend a lot of money on.

If you want a frying pan I use bourgeat indestructible pans, top notch for heat distribution and the non stick coating is honestly the best bar none, I'm confident you could hit it with a hammer and chisel and it wouldn't scratch the coating.
 

Love that 2nd one. I want it. Saying that, I'd burn the crap out of myself on it daily. I always used to in the kitchens by grabbing those bloody handles.

It says it's flat bottomed but the base is barely flat at all, as stated in the solitary review (mine). I bought it originally to use on an electric stove top but it wasn't much good for that. I've since bought an outdoor wok burner and it works brilliantly with that so would work well on a gas cooker. Once seasoned properly, nothing much will stick to it.
 
Do you have an Oriental cash and carry type shop near you? They'll stock decent woks at all different sizes and prices are usually reasonable.
