My friend is having a party tomorrow and he's requested me to bring some pork belly slices done in a bbq type marinade. I've got the belly slices - 6 with no rib bone and six with the rib bone. They are going to be oven cooked.

Can you recommend a nice marinade that I can sling them in for 12 hours or so? I don't mind shop bought or home concocted - cheers :)

I was hoping for a sweet/tangy/smoky combo with a small touch of heat. Something that will end up quite sticky too. Not too much to ask :D:D

Make yourself a BBQ sauce, if you have the time.

The Sauce. From: http://www.randomshenans.com/recipes/7-ribs-ribs-ribs

You will need for this:

2 cups ketchup
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1/4 cup packed brown sugar
2 T. molasses
2 T. prepared mustard
1 T. Tabasco sauce
1 T. of your favorite barbecue rub (I used this Basic Barbecue Rub – see below)
1/2 tsp. black pepper
1 tablespoon of Heinz 57 sauce

Easy as pie and tasty!

Just to follow up, I made the rub and the bbq sauce and can confirm it is dynamite - it worked really well on the belly slices which were sliced 1" thick. Marinated in the rub for 24 hours, then put on a wire rack with some water underneath and roasted for 2 hours, with some of the sauce poured over for the last 40 mins or so. The water/dripping was made into a dipping sauce by deglazing with some bourbon.

I added a small dash of liquid smoke into the bbq sauce too.

Huge thanks for the recipe - my mates now think I'm awesome.

FWIW Heinz 57 Sauce can be bought in Asda :)
