Spec me a soup recipe.

Morning all...

So I'm after a soup recipe that can be made relatively easily.
I'd prefer a vegetable based soup, preferably with some kind of meat but not essential.
But I'm open to offers.

I'd rather make a batch of it, and freeze/thaw what isn't used that day for another.

This is what i do.

I don't have exact measurements sry.

Take some pearl barley and red lentils and soak them in warm water for 10 mins and then rinse.

Put them in pan and boil for 5mins(barley and lentils take longer to boil the the other veg)

Add carrot, potato, leek and onion.

Add a small amount of tomato puree.

About 4 chicken stock cubes.

Salt and pepper.

That's it, if you get it right then very tasty.

Optional, touch of garlic, can of chopped tomatoes, split peas, ham or bacon.
 
veggie soup

pretty much ANYTHING you find in the cupboard/fridge.

Add a bit ham hock or something - pile it in a pan and go for it.

Can't really go wrong!
 
Jamie Oliver's Sweet Potato and Chorizo Soup is really good.

2x onions
2x celery
2x carrots
200g of chorizo
800g of sweet potato
heaped teaspoon of curry powder
parsley
garlic
1.8litres of veg stock

Cook everything bar the stock for 10mins then throw in the stock and cook until sweet potato is done. Season, blend and then throw some fresh chilli on top.
 
Leek and Potato Soup

1) One medium potato - cut into dice sized pieces
2) 4 x celery - cut into 1 cm thick chunks
3) melt 25g of butter in a pan and stir fry the above.
4) Boil kettle and pour 100ml of boiling water on top of a veg or chicken stock cube to melt the cube. Fill to 400ml line when melted.
5) Pour the stock into the pan and simmer for 20mins.
6) Use a ladle to fish out the leek and potato bits into a pyrex bowl/jug and use a hand whisk to puree the solids.
7) Return pureed vegetables to the stock in the pan and simmer for 10mins.

Ready to serve.
