Spec me - kimchi

I've long been a fan of kimchi, since being introduced to it by Korean friends some years ago. I didn't really see it much over here since then, not even in the Chinese supermarkets we sometimes go to and I kind of forgot about it, but in a Korean shop the other week I saw a few jars of it and, rembering how much I used to l ike it, picked some up. I've been eating it with meals three or four times a week, and I'd like to stock up with a bigger jar than the 300g ones we got previously.

The last one I had was Chongga cut cabbage kimchi. That was very nice, but it didn't have the kick I remember kimchi having when my Korean friends used to share theirs with me.

Any recommendations that I can get delivered or find in a Korean supermarket?
 
If you really want to eat a lot of it I'd recommend just making your own. It's very easy to do and you can customise it to have more of a kick if you want to.

It's really easy to make. Buy some gochugaru off eBay if you want it authentic.

I'd not really considered making my own since I've never pickled anything in my life!

Looking at some recipes, it doesn't seem difficult, but there are some ingredients required that I've never heard of. I might take a list to our local Korean supermarket next time I visit and give it a go.
