Looking at these:

Not much to comment on I know, but any immediate thoughts?

It will be going into an old Antec 1200 (Corsair Obsidian 800D coming later :D).

Could you also recommend me a PSU? I'd like modular if possible as my cable management skills are terrible as it is.

Will be needing this for gaming, streaming, video recording + encoding + editing and all that video stuff that I havn't worked out yet.

Any thoughts on 8gb RAM vs 16gb RAM? Any burning needs to get that 16gb? OC have told me that on the pre-overclocked bundle the 16gb is not stable enough for them to do that. I would rather get a bundle over individual components for the guaranteed overclock out of the box and no headache.

Edit. Also regarding the graphics card, is the 79xx series those type of cards that have two gpus on board at once? (If you understand what I mean :D) Will a 7870 be sufficient for maxing out dx11 instead?

Something like this should do the trick for your power needs in fact it is probably overkill but at the price you can't really argue :)

8GB vs 16GB RAM... I would say that 8GB would be fine, you can't get higher over clocks when using more of the DIMM sockets because it puts a strain on the memory controller. You could upgrade the RAM and ask OCUK to drop down the over clock but it depends on much video work you are planning to do.

Seeing as i'm using my old case, I figured I could possibly use my old PSU as well (At least for now).

I bought it from OCUK 3 or so years ago, they no longer stock it but the manufacturers website link is http://www.zalman.com/ENG/product/Product_Read.asp?idx=197

I think it's at least as good as the one spec'd above, any reasons I shouldn't use it for now? It's currently powering a 5879 2gb, and a Q9550 oc'd to 3.5.

I want the bundle, so I don't have to mess about with overclocking it myself.

As for the graphics card, I went off nvidia ever since every card I had from them sounded like an aircraft carrier. In that comparison link, both cards seem fairly even, except for when they both scoring around 60fps or so, and in those instances the 7970 seems to come out on top.

I'm mostly worried about whether my current PSU will be sufficient.
 
The mobo will have an auto OC option and you will find plenty of help here if you want to overclock. It is actually very easy in all honesty. You are getting a 1 year warranty on that bundle. I used the same mobo and got 3 years, I used the OEM CPU as it's cheaper and this only has a 1 year warranty but you are no worse off for it.

The 670 uses less power, the one I spec'd is overclocked already for you and isn't using the reference cooler it has two fans if you look.

Your PSU should be fine for a single GPU. I spec'd the 850W as the mobo does SLI/Xfire, so to overclock and SLI the 670 850W is safe and you get a new warranty on your PSU

Looking at the cost, I'm considering not getting the bundle and oc'ing myself. I'm always worried about popping the CPU though, I nearly had heart attack overclocking this one as at one point it didn't turn on.

If I can use this PSU for now, further along the line I can get a new one along with the new case.
