my ingredients are chicken fillets (thigh) and chicken breast

along with some rice/pasta/cous cous.

* not cooked much thigh before but it tastes a bit better
* something simple and healthy


any ideas?
 
Personally I'd oven cook the thighs in a curry sauce and serve on rice, but there's a mountain of things you could do with those base ingredients. Would add chopped pepper, onion and mushroom to that.

Alternatively, chopped chicken breast fried in olive oil with with chorizo, veg, pasta and pesto is quick and tasty.
 
Most currys with Thighs are very good. Thai curry is easy with a good Thai branded paste. Remove the skin. Chuck some green pepper in when the chicken is starting to brown. Then add some par boiled mange tout & broccoli. Loads of Corriander at the end. I also add fresh mint & basil as well, but this is personal taste. Few beansprouts & crushed cashews to garnish. Serve with jasmine rice.

You could also debone them, bat out flat, dust them in seasoned flour with added finely chopped rosemary, (then pan fry skinside down first) in olive oil for 4/5 mins. If in doubt, whack them in the oven for 4/5mins to finish cooking, but beware not to dry them out. Oven step won't be needed unless they are big boys. Serve with sauteed potatoes & salad. This takes less than 30mins to cook and eat, and is pretty ideal for a midweek dinner :)

Sear the Chicken, and fry until Golden and Juicy inside. First half cook the pasta in salted chicken stock, then put into a baking dish, pour in a tin of chopped tomatoes. Add some basil and oregano... Drop the chicken pieces in and chuck over some wholemeal breadcrumbs... Bake... Then Grill... Then eat.... Mmm
