Spec me some Mac games

TF2, Borderlands 2, The Witcher (1+2), Half-Life, Portal & Counter-Strike series, Bioshock Infinite, Don't Starve, Trine 1+2, Garry's Mod, Starbound. Also check out the Humble Bundles, the majority of the games in them have Mac versions too :)
 
Hitman Absolution, Tomb Raider, Metal Gear Rising Revengeance, Bioshock Trilogy, All Valve games, Civ 5, Witcher Games, All Total War games, but ROME II, Wasteland 2, Divinity Original Sin, Shovel knight, Pier Solar, mcDroid, Verdun, Crypt of the NecroDancer, Hand of Fate, and Infinity Wars.

So many, but as others mentioned it's better to buy off Steam, GOG, Humble, and other places. As with the Mac App Store you Only get the Mac version and not Windows, and Linux also.

Good call on Bootcamp (or I imagine Parallels).

What kind of graphical/FPS performance can you expect from a PC game running under Bootcamp ?

The exact same as you would under a normal PC with the same graphics card. Bootcamp is just a normal Windows partition, aka dual boot. Update the latest drivers and have a blast. :)

Parallels you should avoid like the plague, it's a VM with **** graphics performance.


Also with OS X 10.10 there is a massive boost in FPS for games that use OpenGL 4, Tomb Raider, and Hitman Absolution saw more than a double in minimum FPS with Yosemite Beta 2 and up.

Borderlands the Pre-Sequel is also launching on OS X same day as Windows, and Civ: Beyond Earth is roughly 2 weeks after.
