Train Sim 2017 (aka Railworks).
Flight Sim X - now on Steam after being remastered by Dovetail Games (same people who make Railworks). Very "zen" finding a scenic area such as the Grand Canyon and taking a free flight. Plenty of add on scenery and planes to enhance the experience.

Another one worth mentioning is the Lone Wolf series; they are also excellent and provide a more in-depth combat system than the Fighting Fantasy ones. :)
