Been trying to research all this myself, however there's so much kit and options and I've had no experience with it whatsoever (but my dad is pretty handy at plumbing so I'll have decent assistance). Much appreciated:

Don't mind prebuilt kits or piece by piece, however, it must match (or close as possible) my blue led lighting + black with silver trim colour scheme. I want to have blue reactive fluid as well (I think it looks so damn cool).

Internal only, needs to cool:

intel 775 (e6300 atm, most likely going e6750 v soon to last until Quad around Xmas.
7900gtx - upgrading around xmas
p965 ds4 - upgrading (?) to p35 ds3 until x38 or whatever around xmas.
NB/Chipset if worth it
Memory (2gb geil ull 6400) if worth it (again, upgrading around xmas)
Anything else - if worth it

Will I need a PSU upgrade? Currently a 550w Coloursit that has worked well for at least a year.

Might have forgotten something...

oh yeah, its gonna go in a NZXT Apollo (black)

One good point though which I'll add to the OP, which is to say why I'm going water...

1. Silence/v low noise.
2. Decent overclocking. Got my e6300 @ 3ghz with little work, but hoping to push the e6750 to 4ghz and want to push my 7900gtx so I don't get too impatient for the 9800gtx (or whatever the hell the next 'big' single card is)

Also, any sort of advice/spec is useful, don't feel that just coz you don't have the time/cba to spec a a full kit, doesn't mean you can't tell me that a specific waterblock or pump is great/crap.

I'm looking at watercooling and have done a bit of reading but don't have personal experience yet so please don't take my advice as first hand.

Why are you going water? I don't have experience with that PSU but a pump doesn't use many watts. Water can be very quiet so it depends on what you want from your PSU I guess.

What does NZXT stand for?

Also consider Laing DDC pump (they come in different wattage versions), Danger Den D5 pump or a couple of D-Tek DB-1s. These are all direct currunt pumps, you can get ac pumps but unless you install a relay you might forget to turn them on.

For silence consider a PA.240, PA.360 (expensive and top of the range) or Black Ice Pro II or III (not as expensive and may suit your colour scheme better - not as good performance). Not looked deeply into RADs suited for noisy fans but HE.240 and HE.360 might be good.

Masterklere tubing as it's cheap, 1/2" Danger Den high flow barbs for anything without and any resivour that fits your PC and isn't made of aluminium.

Remember to check your case and make sure you know where everything is going to go before you buy it.

I believe NZXT are the makers of the Apollo case. They're fairly new but their cases, particularly this one have been getting great reviews (and they're clearly BSG fans with an 'Adamas' case and an 'Apollo' case.

Ok, makes more sense. Check reviews of your PSU for noise or (at your own risk) try running just your PSU by following one of the guides on starting it without plugging it into the mobo (you have to short two of the pins but I forget which ones). This should give you an idea how loud it is and if you'd rather replace it for your v low noise requirement. Personally I'm getting an antec phantom which is passive or a huntkey with a 14cm fan as it uses a yate loon (not decided yet).
