this is my new set up.

i am using the stock cooler, and 8gb of tall ram (they have heat sinks on the top)

I would like to get a good air/fan cooler and some more ram, 8gb? 16gb? and maybe a couple of more fans for the case (120mm i think i need)

what would you recomend/why please?

You need to get rid of the tall RAM, if you want a great air cooler:

The Air cooler is one of the best in the business and on offer at the moment..

The memory is Low profile and good quality..and cheap. :)

is that ram nice and fast? and with the cooler, does it come with the thermal paste?
