Thursdays are my quiet dads night in.

The missus takes child to the 'thursday female family orientated natter group' and as such I am left to fend for one's self albeit enjoying it too.

I enjoy cooking and am facing the end of the week rations before the full shop this friday evening. So what I'd like some assistance with, instead of looking on the BBC's Good Food website is creating a meal for £5 or under, for this father to rustle up in 30 mins to an hour and watch alongside Ringside and other sport related recordings.

What ingrediants i've got:

B/L S/L Chix
Lean beef mince
Onions
Peppers
Garlic
Passata
Brown rice/pasta/noodles
'Chicken in a bag' mixes

Let's see some idea's

What spices do you have, I foresee a stuffed pepper.

Sauté onions and garlic and the beef, mix these 2 with loads of fresh parley, cinnamon, salt and pepper , turmeric and Cummin. Add some chili if you like a bit of heat. Cook some of the rice with some raisins and tsp of turmeric. Mix the meat/onion mix with about the same quantity of the cooked rice. Cleans dn then stuff the peppers, put peppers on baking tray, smother in pasta, bake in oven for 45mins at about 200*c. Serve with some more rice on side and some home made tzatziki.

I was going to suggest stuffed pepper, prefer cous cous but if you're going to use beef then rice would be a bit more robust.

Failing that then you could do spag bol and add roasted peppers for the sauce (lovely!)

If you have the maggi Mexican Chicken cook in the bag, have that with rice. Put a pepper and onion in there and I always put a red pepper in to add a bit more heat. Really nice fast meal. Also nice with chips.

Great idea's!

Never thought of going for a stuffed pepper but I'm sold!

That chicken recipe has been added on the favourites bar and I'll do that next week.

The chicken in a bag mixes are really nice for a quick hit I must admit. I didn't think I'd get as hooked on them so quickly. I generally just roast some veg away whilst they cook and they finish at the same time, around 35/40 minutes later.

p.s. Spices in pots include Salt and Pepper (Chinese mix), Cayene and chilli flakes

Cumin and Cinnamon really deserve to be in the stuffed peppers (and in your spice rack), turmeric is mostly for the colour (yellow0 but does add to the taste. These are cheap spices.

Mix pasta with green pesto, then stir fry the mince with random veg, and add garlic spice etc to taste. Keep the veg quite crisp though.

Been eating this a fair bit recently, except using Quarn mince rather than meat. Needs lots of seasoning as Quarn is a bit bland.

Those ingredients scream Chili to me. You'd need to buy some kidney beans, plain tortillas and some spices to make sure its plenty hot though :)

Chilli easy mode:
Mince
Tin chopped tomatoes
Tin chopped kidney beans
Sachet of chilli con carne mix

And if you buy the supermarket value brand, that leaves you £4 for beer :P
