I would recommend dual-core instead. It will be more suited to multitasking.

I might want to add a second monitor in the future - what would be the best card for me to use to do this? I don't think I need anything fancy as I'm not going to be using it for games.

Yup, the GTO16 has two DVI ports at the back, so you can run two monitors in the future. If you're not gaming at all, then get something cheaper instead.

Yep. spec looks very good.
Definitely go for dual core, especially if multitasking, encoding etc.
