Speculating a new build

I'm getting tempted to build myself a new computer because I've just got a new pc at work and it has made my core duo laptop seem really slow. My last pc build was (quoted because it was taken from my sig on an old forum):

Gigabyte 8I945P Pro
P4 630 3.0GHz @ 4.1GHz
1gb OCZ value DDR2 667 4-4-4-12
Sapphire x800GTO2(squared)
SB Audigy SE 7.1
160GB SATA2 Maxtor
Creative T7900 7.1

You can tell it was many years ago and I am a bit out of touch with current technology. Anyway, on to my new pc. I am planning an all-in-one general pc, media centre and casual gaming machine. The number 1 priority is the media centre and having multiple TV tuners for freeview and serving recorded programs for viewing on networked TVs around the house. Gaming and general pc use come after. The current spec I am looking at so far is:

Processor: i5 2500k
Mobo: Unsure yet, something with plenty of features for OC'ing etc.
RAM: 8GB e.g. Corsair Vengeance
Graphics: NVIDIA 560?
Hard drives: Small SSD main drive + 2TB drives as needed
TV tuners: Last was a hauppauge but not sure what is best these days

The system will be air cooled and I haven't decided on a case yet. The budget is somewhere in the region of £500-£700. I understand the specs don't have to be amazing but I want the system to be capable to serve up to 4 streams while being capable of still recording and being used by me.

I know from the past that "help me spec my pc" threads can be annoying but I lost track with technology when my PSU failed on my old pc and having moved to a laptop for uni I didn't bother fixing it.

Also as a side note I haven't yet decided if this will be a windows or linux pc so hardware support is a factor which is why I have chosen nvidia for the graphics.

Does anyone have any recommendations for me for what I am looking to do?
 
TV tuners, Look for Blackgold, these are considered the best.

It's a pity your looking now as harddrive prices have gone through the roof due to the flooding in Thailand.

You still need to buy a case and the TV tuners for the above spec.
