Sprouts!

I love my sprouts and usually just boil them or shallow fry them in butter with a bit of garlic and a tiny bit of chilli.

Got a load to cook tonight and am wondering if anyone has any simple recipes to jazz them up a bit, or give me a new direction to start going for.

The chestnuts idea is sounding good!

I am cooking chicken breasts stuffed with goats cheese and roasted read peppers wrapped in bacon for the main part of the dish, so reckon it will go well.

Got a couple of sweet potatos lying about as well. Might have to make a little sweet mash.

Does anyone ever chop the sprouts up to make a dish? I tend to halve or quarter mine (unless just boiling which is rare). Am thinking about experimenting next time by chopping them up and going oriental on them somehow.

Basically. I have experimented in the past with pre-boiling them, letting them go cold and then frying them. Kind of like you can do with potatos to make fantastic chips.

I stopped doing it though as I like them to have a bit of bite / crunch to them and it seems a bit of a waste to cook them so much as you lose some of the flavour. They need to be cooked as minimal as possible to conserve the good stuff. So yes, gently fry in butter with a bit of garlic and a touch of chilli flakes till tender, but still with a bit of bite to them. :)
 
Along with Cauliflower, the best Veg on earth, om nom nom :).

Sprouts, asparagus and broccoli are my favorite greens. I love all veg though.

Only ones I am not a massive fan of yet is swede and parsnip. I can eat them, but the swede needs to be mashed Scandinavian style and the parsnips have to be roasted.

I need to buy some in and start experimenting. :)
 
Well in the end I just kept them simple by gently frying them in butter with salt and pepper. They were, as usual, lovely and went with my buttered sweet potato mash, and my chicken stuffed with goats cheese and wrapped in bacon.

Definitely going to do them with chestnuts for christmas though.

I love cooking. :)
 
Cooking some more up this afternoon.

Par boiled, then quartered and fried in butter with some bacon.

Should go nice with my roast beef, and celeriac and potato gratin (which is a first). :cool:
 
Yup. Just this friday the girlfriend and I made Bacon and sprout risotto. It was gorgeous. Get a basic white risotto going (google Jamie Olivers recipe if you don't know how to make one). In a separate pan fry your chopped up Bacon until nice and crispy. Remove that then add your sprouts with a huge amount of butter. Keep them cooking on a low/medium heat until just about cooked. Keep them to one side until your risotto is about 5mins away from being ready. Then fold them in. When your risotto is ready, fold in some cheshire cheese (not parmesan like other risottos!), put a lid on and let it rest for 5mins to make it super creamy. Lush!

I'm indifferent to sprouts, I will eat them if given them, but the above sounds quite nice actually!

It makes a lot of difference. Just boiling them is so very wrong.
 
Just heading over the my mums and am in charge of, as usual, the sprouts! :D

Going to par boil then for a couple of minutes then sautee them in butter and bacon. Will no doubt be a little gassy later. :o
