SQL Server help

I want to be able to track any table inserts/updates for SQL Server, is there some kind of debug/tracing facility that does this?

I've been given the task of converting data from a companies old system to our companies one and need to work out how to map the data.
One of the solutions I've thought of is to get the users to do a transaction on their old system and then see what tables this updates.

Is this an additional download?
I can't find it on my install of v2008

I thought profiler was an optional tool you installed via the SQL Server installer, or client tools.

yeah its optional, I would save it to table as well as its much easier to work with.
