Download and install SuperDuper! then connect the new SSD up to the Mac using the caddy.
Format the external SSD (google the correct way to do this via Disk Utility as I’m not near my Mac so can’t give you the exact steps).
Use SuperDuper! to clone from the internal to the external drive.
Remove the internal drive, replace with the external and reboot.
That should be it. It’s a very simple process.

It's far easier on a Mac than on a PC - No problems whatsoever cloning the OS while it's running. I've been using SuperDuper! for years because as well as a clone tool, I use it for a nightly scheduled full backup.
