Standard operating temperatures?

When I built my pc I while back I wanted to make sure it was cool. So it has a nice Zalman Flower (?) CPU heatsink/fan, and up to 4 case fans. The gfx card has a fan of course.
Now I'm not really into overclocking my pc at the moment, so I'd quite like to lower to number of fans, and/or their speeds in order to make my system quieter.
I was wondering what temperatures should I keep my CPU to? ...and my mobo ? (I use Asus probe that can give measurements of both)

My spec is in my signature.

Thanks

Heres a rough idea of max temps:

-P4: about 60ish i think
-Graphics: Gpu will go to 120, best to keep under 100. Watch out for cooking the gpu voltage regulators, they need airflow and i think are best kept <60, ideally <50.
-Chipset: <50, best kept at <45.
-MB voltage regulators: <60 i think, best kept at <50
-Harddisks: Need a little airflow, to keep <45.

Be warned, the asus probe measurent for 'system' does not measure the chipset temperature or the voltage regulator temperature, i have yet to find out what it does measure. I've has two asus boards, both like this.

Also, if that chipset is passive cooled, keep an eye on it. Thankfully i think intel chipsets are much more tolerant to heat than the dreaded nf4, which cooks like mad and dies when it gets near 50.
