It's very nearly full VR. Some pancake games have head tracking which takes the gyro/accelerometer data from the headset to move the view instead of keyboard or controller inputs. So when you look round in the headset the view moves as well.
Although you're playing it on a screen in VR, you resize the screen to beyond the headsets FOV. You also curve the screen around you slightly to give 180 degrees of view. You can also headlock the screen to the headset movements so that you can't see the edge of the virtual desktop screen.
