The issue: Currently not getting the FPS i want & to be fair i'm fps chasing instead of having fun.
I think you'll be doing this whatever you buy. You're not playing games, you're worrying about FPS. You're a faffer, a gamer turns settings down a little bit, doesn't worry about FPS and enjoys gaming. What you're really after is wonderful images on your screen as you half-heartedly play a few games until its time to have another existential crisis about new components, which is what you're having now.

You already have a 1080p monitor, the X34. Just dial it down to 1080p @ 21:9 and see how your 1080 pushes it. Alternatively, leave it at 3440*1440 and dial the game settings down.
What chip you got on the X99 setup? If I were you I would keep the X34 monitor plus X99 setup and use the money you make from selling the other monitors into single GPU powah.
If you're OCD about FPS then you already have the perfect monitor/CPU combo, you need to focus on the GPU because that's where FPS is powered. Downgrading your resolution or CPU will solve nothing. Also, stay way from SLI.

maybe this why i'm looking at going to 1080/1440 max settings good fps no faffing.
im retesting 1440p so far i can max the things i want too.
