Stereo vs 5.1 vs 7.1

For a gaming headset is there any advantage of having either 5.1 or 7.1 as opposed to stereo. Looking in the market for a suitable headset around £70, maybe £100 for a headset and a soundcard, if necessary
As always, any advice is appreciated :)
 
In terms of audio quality opting for stereo through a dedicated sound card's headphone amp jack will provide great sound and as headsets only encompass each ear, getting a true surround sound experience is next to impossible.

I'm a no frills kind of person so I prefer a stereo set up through a sound card, this also keeps the cost of the equipment you use to achieve this low.

I use this combo on my own gaming PC and both work well. Sound is really punchy and crisp so I am happy enough. You could go for a more exotic sound card if you fancy but for general use and gaming it is probably not necessary.
