I have a HP DL320s G1 (Storage Server) which we use for backups. At the moment it runs Windows Storage Server 2003. I'd like to update it to 2008 because I want to run DPM 2010, but Storage Server 2008 is only intended for sale to OEMs. Can I safely install say, 2008 R2 Standard?
 
You can turn Svr2008 R2 into Storage server if you want.

You need:-

There are some OS updates on the 900Mb ISO, and you need to install the Iscsi Target, in addition to a bunch of .msu updates, which turns it into Storage server.

1) install updates from \OS Updates\

2) Install .msu files from \Windows Storage Server 2008 R2\

3) Install iSCSi Target.

Job done.

Isn't this assuming that the OP has access to Technet??

Only issue I can see if moving over is the availability of x64 drivers.
If you can get those, you'll be fine.
