Ok I got a new system up and running today, using an i7 920.

In windows 7 it says its at 2.66ghz but in cpu-z and the official asus suite it says its at 1606. Whats going on there? also the memory values are very low too like 500mhz where as my ram is the OCZ 2000mhz gold one.

Also another question, would you advise to apply more thermal paste to the corsair hp50-1 cooler? I know there was some already there, but my CPU is idling at around 40 degrees, normal?

Don't mix thermal paste... generally less is more as well with thermal paste unless it has direct heatpipe contact where you want more.

For best results clean off the pre-applied paste and use AS5 or MX-3 and apply a thin vertical* line through the middle of the text on the IHS going from top to bottom that starts just before the top and ends just before the bottom of the IHS.

Don't be tempted to spread the paste or apply a blob as these methods will result in less optimal results with the i7 CPU.

* For clarity horizontal would be left to right in the orientation/direction you read the text.

The 1600mhz cpu speed is due to Speedstep reducing clockspeed and voltage when idle for power saving.

You'll struggle to run your ram at 2000mhz on an i7 as it's only rated for 1066mhz memory but 1600mhz should be doable with some slight overclocking.
