I'm new to the Apple world, and one thing I can't work out how to do is set the ring tone volume for incoming calls and texts max volume and sounds from notifications being quieter.

Is there a way to do this?

No way that I know. All notification sounds (including calls/texts) are treated the same when it comes to volume control. You can set an app's notification to be silent though in its notification settings.

On an unrelated note, I would suggest using CopyTrans Manager for your music etc

iTunes is terrible tbh. Love the iPhone but my god, iTunes is rubbish.

iTunes on Windows is pretty bad, it hasn’t existed on macOS for some years though, it’s all synced through Finder.

However with cloud music, I forget the last time I needed to plug my phone into my computer.

I believe it is under Settings, Sounds & Haptics, Ringer and Alerts slider.

The external Buttons on the left is for voice volume. There is also a slider to activate that but it's off by default.
