My computer doesn't have any esata ports so I was looking to buy a sata to esata cable. I was looking to buy either this

The first picture is just a single cable and all I would to do is connect it to a sata port and then to a esata port on a hdd dock etc. But in the second image it adds an esata port on a pci backplate. Would I need an esata to esata cable to use this because the docking station I bought doesn't come with this cable.
 
The pci adapter may be a e-sata connection, you would need to double check the specs.

Yes, if you bought that backplate you would also need an eSATA to eSATA cable. It's probably what I would get though - that way you don't have a random internal cable hanging out.

If you haven't bought it yet USB 3.0 is the simplest option if you have USB 3.0 ports on your PC.

If you don't have any USB 3.0 ports then it will run at USB 2.0 speeds or you'll need a USB 3.0 add in card:
