Substitute halloumi for chicken

Hi all,
Got a veggie coming for dinner tonight, trying to think of a dish I can do where I can just substitute grilled chicken for grilled halloumi.

Any suggestions?
 
I'm not sure why you'd do this to be honest. Why not just cook a dish where halloumi is appropriate?

Greek salad with feta, onions, tomatoes, cucumber. Halloumi on the side. Perhaps some falafel, tzaziki, houmous. Maybe some shawarma if you want to have some meat. Get a few flat breads (or in a pinch, toasted pitta) on the side and you're good to go.
 
Give them an old shoe instead of chicken.

My issue is the fact that they put everything out with their choices. We have a veggie coming on holiday over new year and we're all taking nights to cook in couples. Cooking for 12 anyway isn't always the easiest, especially in a different kitchen but to then have to do something completely different for them is a bind.
Her help was; my parents used to just cook what they would, but don't put the meat in until the end... helpful, thanks.

I've made a chili (most organised I've ever been, all ready in the freezer), so that would work out well for her. I'm taking a packet of pasta parcels for her.

Veggy rant there. Sorry.
 
You wanna try living with one and being the only one who cooks.

I've ended up inviting people round for Christmas dinner so that I don't end up eating nut ****** roast ;)
 
Is there a dish where you can't replace it with grilled halloumi? or a chicken alternative?
Just make sure there's sauce.
