Suggest an apple crumble recipe

Hey there :P

So on Monday i'm going to try and prepare a romantic meal for my girlfriend and want to make her apple crumble for desert as its one of her favourites... Its just I have never tried making apple crumble before so im in need of a good recipe.

The best i have found so far is on the BBC http://www.bbc.co.uk/food/recipes/applecrumble_2971 can you suggest something better?

Also which type of apples i should use if i should just use cooking apples or a mix. Ill also need to make it a smooth apple base since she hates it with chunks i figured i would just stick it through a blender for that part though
 
Cooking apples give you a more tart flavour which I think works better with the buttery crumble. They also hold together better but if you're going to blitz to smooth you could probably use any apple. Careful with the sugar if you're using non-cookers as it may turn out overly sweet.

That recipe is a good place to start and if you stick to it the crumble will work out. You can go with oats etc but honestly I'd stick with that. Google Jamie Olivers rhubarb crumble for a slightly different topping (from Jamie at Home).
 
susbstitue 1/4 of the flour for porridge oats, makes it more crunchy and nicer imo.
also i dont like them with cinammon, but thats just me

yeah I wouldn't put cinammon in it my girlfriend it pretty particular with food haha so im a bit hesitant for the porridge oats however that does sound pretty tasty to me.

Side not i was also thinking i could do a rhubarb crumble instead... might do a half and half if possible haha
 
I made this exact recipe last week! I had a whole heap of red apples that if I didn't use soon would have to throw out. Worked great though, would definitely recommend using some oats, I just didn't have any handy at the time. I love sweet things so it wasn't overly sweet for me, even with the very ripe red apples.

It also freezes pretty well. I defrosted some in the microwave the other night and to my surprise it kept it's crunchy crumble! I thought it would turn into a horrible soggy mess, but it didn't!
 
What recipe did you use? the one that I linked at the beginning or a different one? And cooking apples are not in season are they? Im not sure what apples i should be using
 
you can still get Bramley cooking apples, way better imo.
you dont taste the oats, it just makes the topping a little more crunchy, or you could use ground almonds instead.

it usually takes 2-3 dessert spoons of sugar, but taste a bit before cooking, and skin the apples

That is one simple recipe from Nigel might go with it haha and It's not my call on the cinnamon well it is... its just if I did put it in I would be killed for what would be called ruining the apple crumble haha

So you use brambly cooking apples and 2-3 tbsp sugar in addition to the sugar in that recipe?

Going to try them both tonight as have some people around! Can't beat a good home made dessert I say :D

Tells me how it goes boxman and which one is best :D I would assume the 2-3 spoons is instead of the suggested amount not an extra on top as it could be to sweet with the amount in the recipe.
 
When I were a lad my mum always made crumble with loads of fruit and a thin crumble on top - like 2:1 fruit:crumble at minimum.

Nowadays, everyone seems to make crumble with the ratio reversed. It sucks stinky dog balls.

Well I've doubled the amount of apples in the recipe so we'll see.... I like crumble so I might double that too ;);)

2:1? Na, 4:2 :P

depends on amount of apples used.
when you mix in the sugar, taste some of the juice that is released during the softening process. it may take more or less.
probably too late now.
 
I wonder how things went with boxman's apple crumble

Well I have to apologise that I didn't take a picture but can confirm the above apple pie recipe by Nigel Slater was very tasty and didn't last very long! I ran out of time but will try the rhubarb soon (shop didn't have any in actually).

I used 1kg apples and probably didn't need more than 1/3 - 1/2 tablespoon sugar when cooking the apples but I did double the crumble mix as the dish I used was quite wide.

Only other tweaks I would consider in the future is using a tiny bit more butter but only ever so slightly (10% max) and a few more oats as it really made a difference. I will try cinnamon in the last couple of minutes of cooking the apples and perhaps a clove or two next time.

Thing I love about these sorts of recipes is that they are so simple it really acts as a base to then tweak to your own taste.

Got a load of freshly frozen blueberries I need to use so may add a cup of those to the apples as well.

Oh, and I gave it another 5 minutes cooking time as I like the crumble crunchy
