Suggest extra stuff I can get my Mac Mini to do!

I love my Mac Mini. I use it as a Plex machine mostly, it lives under my TV.

I want to use it for more, for fun mostly. I use it as a file server within my house, but it doesn't see a huge amount of use for that. I just keep some bits on it that I use from different machines upstairs and downstairs.

Purely in the interests of fun, how would I go about setting it up as a web server and mail server? I have MobileMe so I don't actually need it for this stuff, I just mostly think it would be interesting to experiment with.

Would I need Mac OS Server for this, or can I do it with freeware/open source tools? I'm googling it up currently but everything just points me at Apple pages about OSX Server!

Anyone got any good resources for me to have a look through? I'm looking at you, Smudge, it was a post of yours that piqued my interest!
