.hack//GU vol 1-3 is a great series. You play a gamer who plays an MMO called "The World". You send and receive email, read forums etc (this is all staged, you don't actually connect online but the way it's done is really cool). It's an action RPG and battles are real time. I like turn based, but Hack GU is worth playing regardless. Don't miss this.
Valkyrie Profile 2, Chrono Trigger, Suikoden 3, Arc The Lad, Dark Cloud 2, Champions Of Norrath, Brave Fencer Musashi, Parasite Eve and Xenogears to name a few I consider to be RPG 'classics'. Some of them are PS1 titles so bear in mind you'll need a PS1 memory card for your PS2 in order to save.
What about something a little different. Kingdom Hearts 1 + 2 are both solid rpg's but the whole Disney character thing wasn't my cup of tea. Ever tried a tactical RPG? Disgea 1 + 2 is recommended, and I really liked Final Fantasy Tactics.
Something even more different than that? Okami, while not a traditional RPG (it's more like a Zelda game.. ish) is stunning in both it's looks and playability. Odin Sphere is more RPG than Okami, but not RPG like Final Fantasy -- doesn't matter much as it's a good blast.
You won't really go wrong with any of these, just check IGN for screenshots and pick the one you like the look of. Some of them are starting to look really dated now, but gameplay wise they can't be beat.
It is my personal belief however, that in FF7 and FF8 you've already played the best console RPG's there are.
