How about a 5600g? I'd be running two monitors. Edit: beat me to it!2 cores per VM and 2 cores for background a cheap 6 core CPU like the 5600 and 32gb of memory.

Part of the reason I chose that board is the bios flashback feature which you can update the bios without the need for another CPU. What about a 'mini pc' like a MINIS FORUM Mini PC (easy one to find in google etc) or similar... just thinking that it's tiny size might be useful in terms of tucking it away out of the way etc. Little bit more expensive depending on specs but they're also more powerful if you go with the (assuming we stick amd) ryzen 6900hx model....there's cheaper versions too.
