So I have a dot which I'm happy to have the sound to come out of, but I'd like to sometimes easily be able to get audio into the phono Aux input of a nearby stereo (eg: sometimes when playing music).

Any suggestions how to achieve this?

It seems the moment you plug in a 3.5mm phono socket into the dot, its own audio is lost, so I suspect even if I get a lead with a switch to optionally send the dot's output to a hifi, it won't allow the sound to come out of the dot when desired.

Is there maybe a way of having a bluetooth feed into the stereo's aux input which then the dot can optionally transmit to?

While you could use a raspberry Pi and hack together a solution, an Amazon Echo Input at under £15 would probably be easier.
The problem with that is you then have two Echos within feet of each other?:-
- The Dot
- The Echo Input

So if ask:-
- "what time is it?", where you'd want the Dot to tell you out of its speakers, what's to say the Input won't try and respond?
- "play music by Elvis", where you want the music to come out of the stereo, what's to say the Dot won't try and response?

ie: How do you control when you want audio to go to the stereo, and for the rest of the time for it to come out of the dot?

It sort of feels the answer is to have the Dot and to either:-
- Just have a lead to the stereo you plug in/out of the back of the Dot when you want to.
- Look into a Bluetooth received to plug into the back of the stereo the Dot can connect to. This would give the benefit of being able to use a Phone too I guess!?

So maybe the Bluetooth receiver, with audio into the stereo aux is looking like the best option. And telling the Dot (or a phone) to connect to it...

You give them different trigger words. Amazon give you a choice of 3 i think.

I had problems with Alexa linking to bluetooth inputs on an amp, because it depends on what the bluetooth unit identies as - you need one that says it is a external speaker or so. It's been a year or so since I was looking into it though, my hifi went into storage for a while :(

Closest I got to doing what you want... Alexa normal for most stuff, Alexa playing music on the amp when needed was.. Plex client on a PC connected to amp, Plex server (could be on same PC), Plex skill on Alexa. Then I could say "Alexa, tell Plex to play Queens Of The Stone Age".

I also used the MyMedia skill as well for accessing an iTunes library, but it was always a bit of a moving target for the various bits involved.
