I wouldn't go for either of them, instead opting for a much more reasonably priced Seasonic Focus Plus Gold which are excellent psu's. They have a 10 year warranty too.
With that spec it wouldn't do any harm to stick with 750W then as the 5820K can pull a 300W+ on it's own when clocked and under stress test. The 1080 ti can also be power hungry.
The Seasonic Focus Gold mentioned by pasty is a solid unit although it can be a bit noisy at higher loads. You can see in the Toms hardware review below.
The Prime has a bigger fan of 135mm so it should be quieter when not running in passive mode. The Corsair RMx is also very quiet, but the 750W is out of stock at the moment on here.
