You should know though that SLI is really on the decline with many games not supporting it or the implementation is poor or often months after the game has launched. You'd likely see better FPS overall, and more consistent FPS with a faster single card such as a 2080ti which you could likely afford by selling your current 2070 Super for around £450 and putting the money towards said 2080ti.

Easily enough power. Looking at the worst case a overclocked 2070 super Evo OC draws around 265w (card only) so 530w for a pair of those cards overclocked. That's not a route I would go down though. I agree with MissChief, multi card gaming has had it's day and a powerful single card is the way to go so my choice would be a 2080ti or to wait for the new cards from both AMD and Nvidia launch, possibly in September.
