If I wanted to do this could we both just simply pull our hard drives out and switch over without any problems?

Should work, especially if they are of the same generation (Look at the 'Model Identifier' string in the System Profiler utility)

Some licensed software might get upset if it takes a fingerprint of your hardware as part of the licensing process.
