Sweet Potato Ideas Required.

As per title really. My Wife and I really enjoy sweet potatoes but at the moment I only ever do one of three things:

  • Mashed
  • Soup (with red onions)
  • Wedges
Does anyone have any other ideas as what to do with them.

PS when I make wedges they never really turn out crispy so any pointers on that would be welcome.
 
:o Can't believe you've never just had them baked! They're epically nice :)

I made a stew the other night with butternut squash that I'm sure would work fine with sweet potato too, it was a 'whatever is in the cupboard' job. (Serves 4-6)

1. Brown some garlic and a chopped onion.
2. Add chunks of sweet potato chopped into 1-inch-odd cube chunks. (2 should do it)
3. Cook for a bit.
4. Add a tin of lima beans, a tin of black beans and stir.(Chickpeas would work too)
5. Add half a pint of water and a tin of coconut milk.
6. Throw in a bunch of curry powder, chili powder, ginger and a sprinkle of salt and pepper.
7. Let it simmer for 20 minutes or so until potato is tender and sauce is thickening.

Serve with cous-cous made as follows:

1. Pour off a bit of the juice from the pan, add a splash of water, bring to the boil then add the cous-cous and let it sit covered for 10 minutes to fluff up. Add in chopped fresh red/orange pepper, mango and spring onion and stir it all up.

Serve!

Sounds good apart from couscous - simply cant stand the stuff ! Would it work with rice ?

Any suggestions on how to create a crispy wedge when doing in the oven?
 
I'd love an answer to this. I have sweet potato chips quite often and only managed to crisp them once, by accident. No idea what i did differently!

Been digging about on tinternet and found out that most people blanch the potatoes first then pat dry and then put wedges in a bag with a little olive oil, salt, pepper and what ever spices you want and then cook on baking sheet @ 425F/220C/GM7 for anything from 20 mins to 35 mins.

Gonna try this method next time.

Another one from Jamie Oliver is Sweet Potato and Chorizo Soup. Really nice.

800g sweet potato
200g chorizo
2 carrots
2 celery
2 onions
2 cloves garlic
fresh parsley
heaped teaspoon of curry powder
2 chicken or veg stock cubes

Chop everything then cook everything in a little oil with the lid on for 10mins. Then add the stock cubes pre-mixed with 1.8litres of boiling water. Stir and bring to boil then simmer for 10mins. Then blend. Add some chopped chilli to the top when serving for an extra kick.

Really nice and filling.


Now this is definitely getting tried apart from the blending as I prefer my soup chunky.
