Switching between single / triple / VR from one machine

Looking for some suggestions on how best to tackle an up-coming problem.
Currently have a single 1440p monitor (DP), VR headset (DP) and a small system monitor screen (HDMI).
I want to move my sim racing gear to a dedicated rig with triple 1440p monitors (all DP), whilst retaining my current setup and connecting them back to the same PC.
I have an MSI 3080 Ti VENTUS 3X which has 3x DP and 1x HDMI, so obviously not enough connections to plug it all in.
Should I be looking at using some sort of switch? If so what should I be shopping for? The sim-rig monitors will be 120Hz and desk should be 175hz, in case switching hardware can't handle that.

Something like:
DP 1 - Switch - Desktop / Sim-Rig 1
DP 2 - Switch - VR / Sim-Rig 2
DP 3 - Sim Rig 3
HDMI - System Monitor

I can swap my desktop monitor to the rig and enable 2 other surround monitors, and I can also use VR with a single monitor active at my desk or on the rig.

I'm in a similiar situation.

3x 4K LG OLEDs
VR headset
Monior

I've decided to just ditch the monitor and use 3X OLED TVs, one as a monior. Final DP port is for the VR headset.

HDMI switch is just too much hassle and clunky. essentially lose a screeen mate and remember to disable NVIDIA surround when not using it.
