Switching from 1080p to 1440p on a older GPU <--- for now

So running a new PC Build just have not upgraded my GPU yet at least until the prices drop will be looking into top-end Nvidia.
My Current GPU is a EVGA GTX 1070 SC and I have two old monitors they must be about 10 years old have done me proud for their age but really do lack in Response times and refresh rates.

Screen Size 24"
Maximum Resolution 1920x1080
Response Time 5ms
Brightness 250 cd/m2
Contrast Ratio 1000:1
Refresh Rate 60 Hz

Really want to dip into 1440p but am I going to see a decrease in quality if I drop resolutions? until I upgrade my GPU.

Or am I going to see much of a decrease in dropping Graphics settings?

I'm looking on getting dual monitors for around £700 for the pair then whatever extra for a dual mount arm.

So do you think it's worth going to 1440p or sticking with 1080p?

Currently not the latest titles.

I used to love Counter-Strike which I know won't be a problem been thinking on getting Xbox Game Pass, I have friends that play Sea Of Thieves I also like to play Civ 5 and maybe fallout 76.
In the hopefully not so far future when I upgrade my card will be jumping on recent games.

I also do some photo editing which are not good on my current monitors and will also be media streaming.
