Synology folder permissions doing my head in!

It (in my mind) is quite simple what I'm trying to accomplish.

I have 2 shares (Duplicati & Downloads), mounted with NFS, I do not want these accessible via SMB.

I have another 2 shares (VM Backups & Images), which I do want mountable via SMB.

If I set the permissions on the NFS shares to deny, it stops my NFS share working!

I have another user 'Backup' which runs hyperbackup, to copy data from one of the NFS shares to an external USB drive.

Why can I not set separate permissions for NFS and SMB shares?!
 
Unfortunately I don't have a Synology unit to hand to get specifics but it is one I find a bit frustrating with these NASes you have to get your head around the differences between user/group level share privileges and folder level privileges :( there is a global user group I think called everyone that makes it confusing.
 
Could you not just create an user for SMB, deny them access to Duplicati & Downloads but allow for VM Backups & Images?
