I was browsing on the T-Mobile website and noticed a star by the word 'Unlimited' when it starts speaking about using the internet.

http://www.t-mobile.co.uk/shop/mobi...pay-monthly/webnwalk/18mth-flext-20-webnwalk/

So in the small print it says...

Mobile internet (t-zones, WAP or web'n'walk) charges
Browsing costs 0.73p per KB, a maximum charge of £1 per day no matter how much you browse the internet on your mobile phone.

Does this mean i have to pay a maximum of £1 a day everytime i use the internet on TOP of the £27.50 i want to pay a month? (Nokia N95)

Ah ha. :)

So what happens when you go over the 1Gb limit? A charge? Will i have some sort of useage meter so i can monitor how much i've used?

If you go over 1gb dont worry about charges, if you constantly do it they will call you to warn you, keep doing it again they might limit your or block you from using web n walk.

If you enable logging in applications on the N95 you can track sent and received Packet Data over a 30 day period.
