***Tasty recipes, Tomato and bacon pasta.

I love pasta dishes and this is a very simple yet tasty dish that takes 20 minutes and is all your own work.

Ingredients.
Italian dried herbs, id prefer fresh but it isn't practical most times
Salt + pepper
2 tblsp Extra virgin olive oil
75g Pasta of choice, im using Manfredine.
3 Strips of streaky smokey bacon.
200g Cherry tomatoes
1 clove of garlic
Parmigiano Reggiano or other Italian hard cheese

Start by putting a pan of hot water on to boil salting the water with a couple of good pinches of salt, finely chop your garlic, dice your baconand half your cherry tomatoes. Add your pasta once your water begins to boil.

Heat the olive oil in a pan on medium low heat and add the bacon.

Once you have a nice golden colour to your bacon add your garlic and tomatoes and a good pinch of Italian herbs and fresh ground pepper

Really get the juice out of these and you get a nice sauce in the pan.

By this time your pasta should be almost done, you want to drain it off now and add it to the other ingredients letting it finish cooking in the pan turning and cover all of it in the sauce,

Top with your cheese and you have an easy yet great tasting dish that takes no time at all.

Sometimes the simplest dishes are the best. I do something similar and it's a plate of win every single time. Quite nice if you add sausages too, even good old bangers will do.
 
Its very tasty, makes an epic lunch if your in on your own. I cant understand why people eat processed food when there is stuff like this just sitting waiting to be discovered.

I have some smokey chipotle chilli sausages in the fridge, might just give it a bash over the weekend for lunch.

i could eat that right now.

I do something a bit similar at home. I throw in peppers garlic and onions as well as the bacon and cherry tomatoes. Once everything has cooked through I add a bit of passata, red wine, lemon juice and chilli. Sort of an arrabiata I suppose. I love the flavour that the fried cherry tomatoes gives.

Oh yes, a smokey chipotle flavoured sausage will give it a nice arabiatta like kick. Works with chorizo quite well too.
