What should i use to check on the temperature of the following?

CPU
Northbridge
GPU

CP - CoreTemp

GPU - GPU z

and for NB whatever software is supplied with your mobo (asus probe in your case)

Apparently the P5E doesn't have NB or SB temp sensors.

Really? then you will need to get a temperature probe

The heatsink fells very hot to the touch, got a small fan blowing over it at the minute though to see if there is a difference.
