Temperature Gauge moving randomly

I currently have the misfortune of being riddled with a 1998 Peugeot Expert van, I say misfortune as its the non-turbo 1.9 engine developing a whopping 69bhp. Fully loaded it will crack 60 in almost 40 seconds and top out at 75mph.

Anyway, back to the point. Some times the temperature gauge will work fine, for weeks the running temperature will stay at 90 degrees (which I consider normal behaviour).

- then for a few days or weeks it will only reach 70 or thereabouts
- then for a while it will decide to vary from 70 to 110 depending on if I am in traffic or not (but the warning light does not come on when it goes to 110 degrees), and turning electrical consumers on instantly makes it go up further
- This morning when started from cold it went immediately to 90C
- And on the way back home today, the needle hunted up and down between 70, 80, 90 and 100 degrees randomly.

What could cause this behaviour?
