Temps, which to trust? And max

Sorry for the slew of n00b questions lately, I'm kinda getting back into this whole overclocking/cooling lark after years of just using my PC as, well, a PC

I notice programs such as speedfan show up a "CPU" temp (which correlates with the BIOS CPU temp) as well as the two core temps. Which ones should I concentrate on more? The two core temps?

Also, what's the max safe temp (of whichever reading above I should pay attention to) of my C2D E6420 I should be watching out for, before it starts to melt?

I would look at the core temps, also double check temps with Real Temp & Core Temp.

The link below states that the max temp for your cpu should be 60.1°C, so if u have thermal control enabled in the bios, you won't have to worry as if the cpu gets that hot the comp will just shut down to prevent damage.

The max for the cores on that cpu are 70c as shown here

So basicly you can keep an eye on both overall cpu and core temps.
