Testing the sharpness on lens

From a monthly camera magazine, they gave out small A5 Cardboard sheet with various shapes and symbols.

I just tested my 3 lens,

50mm F2.8 @ F5.6
18-55mm (350D Stock lens) @ F5.6
35-70mm F3.5-4.5mm @ F5.6

As you can see, the difference is quite suitle. Though i'm not even sure i've done this test correctly.

It should be in the custom functions menu, it means when you press the shutter button the mirror locks up first and then when you press the shutter button again it starts the exposure. This stops the camera shaking slightly when the mirror flicks up giving you a cleaner image.

Also, use the timer function so when you're pressing the shutter button you don't move the camera.

Using mirror lock up and the timer function on a tripod will give you the sharpest image possible.

Since i have a Canon, how do i do this mirror lock? Do i put it in manuel mode and move the f-stops to "Bulb" setting and then choose any shutter speed?
