Thai (ish) flavour stew.

Bear with me here.

During the week I make stews and we just reheat it, saves cooking everyday during the week, Ive been doing the normal beef stews, chicken and chorizo etc.

But, a few years ago in my old job they had a canteen and they made this stew once, I'm after some suggestions if ingredients, what would go well in it, doesn't have to match either.

It was based on coconut milk, no doubt mixed with chicken stock, had chilli, garlic, ginger (I doubt they used galangal) and has beans in it.

I'm looking to make something similar definitely with the coconut milk, chilli, ginger combo flavour, no meat, so maybe beans? I remember they put rice in it but I dont want to be reheating rice, it's not a good idea.

Corriander would go well, after that I'm running out of ideas of what could go in it.
 
Were they definitely beans? Not edamame or perhaps mini Thai aubergines? Can't say I've ever seen Thai food use beans but I might be wrong (and there's nothing stopping you using them as a meat replacement)

After just reading the subject Thai + stew I was going to suggest maybe it was a rendang type of thing? I think that's more slow cooked rather than your usual green/red curry.

Yeah deoesnt have to be beans in it.

I am thinking some kind of thai style stew, plenty of vegetables, chilli, cococnut milk, corriander, garlic, maybe some fish sauce.

Vegetables, I think cauliflower, aubergiene and mushrooms would work well, maybe sugar snap peas of similar, want plenty of vegetables in there.

But I dont know what to bulk it with, noodles will just disintegrate, and rice is probably borderline dangerous to keep reheating.....

You want some lemon grass, and thai basil in there (Tesco sell it).

Yeah good shout on leman grass I have a load fresh frozen in the freezer, I used to do a fair bit of thai style cooking a while back but nothing quite like what I want to attempt.

EDIT: Thinking about it, could put fish in there, altough ideally want to try meat free, but fish could work.........
 
Just go for it, that's half the fun of cooking for me.

It sounds like you know what the basis should be, take a couple of tips off here, like Thai Basil, check a few Thai recipes to get an idea of ratios of spices and chuck it in a pot.
