What is the absolute best type of potato for making chips ?
All the fish and chip shops around where I live make amazing chips, however I cannot afford to be getting takeaways a lot at the moment.
So what is the best type of potato for making chips ?
what type of potato do the chippers use ?
 
Heston recommends another type, but Maris piper is his back up recommendation if you can't find the other one.
You really should give his tripple cooked chips ago, omg best chips bar non.

Wasn't keen on his battered fish, but then mine didn't end up looking like his, and the 24hr beef just isn't worth the effort. But his chips omg the chips.

The secret is pretty much boiling till 1 second before destruction. Then being extremely gentle with them, so they don't fall to bits.

The chippies round here get catering grade sacks of spuds,it's what the supermarket's / shops reject due to the look, some need triming before going into chiping machine
As above maris piper the 'waxier' the skin feel's the better. I woudn'tbother with hestons triple fried to much faffing, Hairy bikers have a nice recipe on bbc food for double fried.

managing to get them to taste just like the chippers chips is going to be interesting.. easier said than done.
 
Ive stopped making chips, i cut wedges form marris piper, nuke them till the outside is dry, cover with olive oil salt and pepper then bang them in the oven for 16 minutes, absolutely gorgeous they!

when i did make chips i found marris piper and and rooster red potatoes made fantastic chips, stick them in the fryer for 5 minutes on low, low enough they dont sizzle but enough to start cooking. remove the basket from the oil and salt, heat the oil too maximum and then re submerge. best chips every time.

also i used crisp and dry, only oil that seemed to produce consistent great results, quality of oil is as important as the spud i think.
